hi there, i am thinking of baking muffins with rice almond coconut flour.

any tips re blending and ratios for blending and what to add for sweetness?

also, to prepare these flours before baking, how long do you soak for and do you add any starter with them? i read that westona advocates using a tablespoon of rye flour with the water starter for oatmeal to kick start the phytase process, any opinions of adding a splash of water kefir with this soaking process? many thanks.

Ralph, it certainly won't hurt to add a dash of water kefir. If the bugs from the kefir can get it to acidify a bit, that's what you're after.
