My sourdough seems very slow

Postby Shadiya on Sun Jun 23, 2013 4:49 am

My sourdough seems to be very slow to rise, much slower than it did at first. It's sitting in the kitchen, currently 19 degrees, and after almost 24hrs, it's hardly risen at all. Have I inadvertently killed it do you think?

You didn't kill it. Is this a new sourdough that you are starting? You should stir it well every now and then. It should get things moving again. If it doesn't and it is not new starter, feed it a bit more equal parts flour and water (preferably rye but any will work)and stir well .Make sure it is getting enough air.

It doesn't sound like it is currently healthy enough to leaven bread. You may have to feed it 2-3 times a day for a few days until it becomes healthier. A good test to see if sourdough is healthy enough to raise bread is to throw a little bit of your starter into water. If it floats, it is healthy enough to to leaven bread.
