What is Bouza supposed to taste like?

First of all, this is my first post here. I have made several of the recipes in Wild Fermentation, and I am currently working on Bouza.

So I am in the final stages of making my first batch of bouza. And now I realize that I don't know what it is supposed to taste like.

I had a taste today, after 24 hours fermenting. At first I thought it went bad since it tasted very sour, but then I realized that it was the sour dough yeast that I was tasting, not vinegar.

So the flavor was as follows:

It started with a strong sour taste, giving way to a mildly grainy taste, followed again by another sour wave. The second waved had a more salty than sour.

As a second question, does it ever taste alcoholic if we followed the instructions? I guess not, but I want to hear from other people first.
