fermenting wheat

I was wondering about something. My family has a problem with grains. We can eat sourdough when I use sprouted flour. I was wondering if I sprout the grains....can I then ferment them? I would like to make flour and do other things.

Ive been wondering the same. Ive been hearing so many bad things about gluten and after being gluten free for about a year i still dont think weve figured it all out. I want to invest in some sprouted flour as well for sourdough, but its so pricy. Dont want to spend the money if even sprouted sourdough is bad. Oh, how i miss bread.

Yes, sprout the grains, then ferment them. It's very good. Use the grains to make bread, and drink the liquid as rejuvelac. Try spelt rather than Frankenwheat though (normal wheat, that is). I have a fairly good recipe for slow fermented spelt sourdough, but it's on my website, so I won't post a link here. If you are interested, pm me. There is nothing for sale on my website, so this isn't marketing :)
