Hello everyone! Long time lurker, first time posting.
I have been fermenting for myself, friends and family for a couple of years now, selling, gifting and trading jars of fermented goodness around my community. Recently I have been giving thought to scaling things up a bit and selling at a few farm markets and local health food stores.
The biggest question I have is packaging related. I have always just stored my ferments by screwing a mason jar lid ring down over a piece of plastic wrap, which seems to allow for off-gassing. I want to be able to present a professional looking product, but I am also very concerned about sealed jars exploding on store shelves or in customer fridges. Is there a special jar/lid that allows for off-gassing during transit and refrigerated shelf time? Are there plastic tubs that would allow for the same? Been searching for a couple hours and haven't found much info.
