I'm not sure what's unusual! Kimchi with as much seaweed as cabbage? Boiled eggs in chili paste? Winter squash in miso? Summer squash in nuka for a month? And it's all good/interesting!

Boiled eggs in chilli paste??? Now that is rather unusual.. I thought seaweed stopped the fermentation due to iodine, so it does work? Is the seaweed taste still very very strong (I am thinking of people who don't like it very much due to strong taste) or does it quieten down? Well, you have some unusual items there, I have not even heard of the last one!

dunno about unusual, but fermented grated sunchoke (just sunchoke & a bit of salt) is always startlingly good. such an amazing sweet & sour flavor. people (even consummate fermentors) are always saying, 'so, what else is in here?'

also watermelon rind.

Sunchoke????Which plant is that? Is it the jerusalem artichoke? Or artichoke? Might have to gogogle it. Sounds good!

It is the Jerusalem artichocke. I wondered about that, since it is one of the favourite prebiotics, fermenting it outside of the digestive system might well be nice too for them all to have a party! Does fermenting it make its flatulence powers lesser??? ;-)
(hopefully it doesn't make it WORSE)

yup, fartichokes. fermenting definitely doesn't make it worse. seems to make it better for some. ymmv.
