Flood soup (cold)

Postby robertt on Tue Mar 05, 2013 11:50 am

I've been flooded in here on the mid-coast of NSW, and the cupboard was a bit bare. I had buttermilk, which I've been making regularly just by adding old starter to a fresh batch of powdered skim milk (I add powdered coconut milk for interest). I had some fermented crystal cucumbers, which are good for a lacto pickle if you wither them first so they don't go sloppy and dilute the brine. And I had some fresh crystal cucumbers. I chopped both the fresh (skin off) and sour cucumber and added them to cold buttermilk. Black pepper...then serve!

It was surprisingly delicious, especially with the addition of little pickle juice for salting. Though I avoid "health food", it occurs to me that the mix must be pretty good for one's insides. I imagine if anyone was interested in a cold soup recipe, this would do the trick, even just with store bought buttermilk and fresh cucumbers. Possible seasonings are fresh dill, fines herbes, horseradish. For a formal meal, maybe enrich with sour cream?

Just thought I'd share the recipe...while I'm flooded in!
