I read a lot about S. cerevisiae using sucres like glucose or disaccharides , but what can Saccharomyces use further? like when fermenting manure, what does it use then? ureum, what other organic compunds?

I would expect it to require more than simple sugars in order to reproduce. Although yeasts do tend to like sugar, I don't think that it is the only thing that they require.
Yeast cells will grow on a minimal medium containing dextrose (glucose) as a carbon source and salts that supply nitrogen, phosphorus, and trace
metals. Yeast cells grow much more rapidly in the presence of rich medium
that contains reagents such as yeast extract and bactopeptone. These provide
many of the metabolites that the cells would synthesize when growing under
minimal growth conditions.

Potato can be an effective medium to culture many organisms and should provide what is needed.
