I stored a small scoby with tea for many months in a glass jar with lid, where it slowly evaporated. It now has a consistency of a gel or chewy candy and smells like honey! I read that you can evaporate the tea to make a taffy, but can you also do this with the scoby included, as mine is? It certainly smells edible.
