How much sugar to add to water kefir?

Hi,

For kefir ferments that need sugar, how much sugar would I add to say, to a quart of liquid?

Also, and I'm a little clueless here obviously, but if I want to kefir-ize coconut milk (unsweetend with 0 sugar) I would assume I need to add sugar to it as well?

I brew water kefir and measure using a pint glass, four pints of water gets half a pint of sugar, or just under maybe. So that would be a quarter pint of sugar for one quart. Not sure about the coconut milk question I'm afraid, but I think you could test it by just putting some grains in unsweetened milk, seeing how it goes for a day and if there's absolutely no activity then you could add sugar? Seems like it wouldn't do any harm.

I agree with the previous quantities for water, and would use a similar equation for the coconut. (I personally have used no sugar with coconut, but it has been hit and miss, when I add sugar it has been more successful).
