Trouble Growing SCOBY

Hello all. I am currently trying my first attempt to grow a scoby from storebought bucha. It has been going for about five days and I see no sign of a scoby forming on top, however I see what appears to be an increase in the volume of sediment on the bottom of the jar. Does this just mean that the process is starting slowly (from my house being too cold I imagine. It has been in the mid to low sixties)? Should I let it continue or should I start over with a fresh starter of kombucha from a bottle and new tea? Thanks for the input! :ugeek:

Give it another week or so, and if there's no sign of any sort of jellyfish slimy film on top, try again. If nothing's happening after ten days or so, you might want to experiment with different levels of tea on the next batch. Less or more, depending on whether you used a big amount or a small amount with the first one. I imagine that the bottling and shipping process is rough for the organisms, so maybe a small, strong infusion is the way to go?
