Ginger bugs and beer

I am fairly new to fermenting, but am having success with ginger bugs and ginger beer. I have been following the wellnessmama.com recipe as well as tips from a few YouTube videos. I have a couple of questions that don’t seem to be covered from my bit of online research.

Is there a way to know the alcohol percentage in the beer?

How long can it be kept once it’s been bottled?

I've never cared about the alcohol and I've never gotten enough to be able to feel it, so I can't speak to that first hand, but I think brewers use a hydrometer for that. But you might have to measure specific gravity before fermentation starts and then when done to know. I'm sure you can find details by searching out hydrometer details.

I don't know what the far end of safe keep-time is. A few weeks in the fridge has been safe for me. But it continues to build pressure, so at some point it'll becomes dangerous.
