I started an apple cider ferment in the fall to make vinegar. Its been in a vessel exposed to oxygen this whole time. I just checked on it and took a whiff and it smells like nail polish or rubbing alcohol. I am assuming this is a bad sign so I'd like some confirmation before i get rid of the whole jug of it. thanks. also, i did not know it was possible for vinegar to go beyond vinegar.

What you're smelling is ethyl acetate, which unfortunately won't go away. In small amounts it may not be a big deal, but if it's unpalatable...well, you're probably stuck with it.

Just for personal knowledge, What causes the ethyl acetate in a vinegar ferment. This is on my short project list so I'd like to avoid making nail polish remover.

I've often had a similar experience when I first take a whiff of my brewing vinegars, I'd recommend pouring into a clean new container and topping off with a little cider.
