Lost my liquid

Postby Mrlee on Thu Jan 02, 2020 10:54 am

I just finished a two week batch of sauerkraut which tastes fine. However, I overstuffed my two liter fermentation crock and the liquid oozed out which has happened previously, but only a little. This time when I broke the airlock to pack the sauerkraut into containers, all the liquid had ooozed out leaving the kraut with no liquid at all. In spite of the good taste, is it still safe to eat without a brine? I added a little spring water to the containers before refrigeration. I could have added back the liquid which oozed out but thought it might not be safe after being exposed to air for a while.

That seems to happen to me a lot and I never was concerned about it.

Once I refilled it a little with salt water, but that didn't change anything so I didn't bother after that. I've kept kraut in the fridge for months like that and it was still good.
Currently looking at things and pondering about stuff.

Thanks guys. I wasn’t sure if it needed to continue to be covered in brine or not. And why you may ask was my crock sitting in a bowl? Because one time my kimchi brine bubbled up out of the container, onto the counter and all over the floor. Not a good day with the Madam of the house.

Yup, a plate or bowl underneath is a common measure. We've all been there!
